WINE APPRECIATION

AFICIONADO PROGRAM

Dr Lee is the Creator of the Aficionado Program. Dr. Lee and his team host these programs once a month. These programs are to warmly introduce the topic of wine, spirits and sake to both enthusiasts and professionals seeking to explore, understand and appreciate the different styles of wines, spirits and sake showcased.

These programs are 1.5 hours in length generally. They will cover the origins, different styles, viticulture and vinification of the wines and spirits. Naturally, we will be sharing the wine, spirit or sake through conducted tastings, and in certain instances, with some pairings. The Aficionado Program is designed to introduce participants to the many styles of wine. Guests are encouraged to join our WSET certified programs to learn more.

FRANCE

The French are known for their joie de vivre. Join us as we take you across this fabulously remarkable country of wine excellence. From the sparkling hillsides of Champagne to the Southern borders of the Languedoc. In between, we retrace the steps of Roman legions into Burgundy and the Rhone. Yet, we recognize the superlative quality of Bordeaux wines and the romance of the Loire. This is a fun filled evening.

SPARKLING WINE

From the House of the Romanovs in Russia who commissioned the famed Cristal sparkling wine to Priorato in Spain, sparkling wine is a favourite of many. Different grapes and methods of production allow us the pleasure of bubbles, further enhancing our appreciation for Champagne and equally so the fresh Prosecco of Italy. Discover how it all happened and perhaps someday visit the Champagne Avenue in Epernay.

ITALY

SWEET WINE

From Eastern Europe we plough through the fields to learn about the famous Tokaji and how it is made. Forging ahead to the valley of the Rhone in France, we discover the luscious Beaumes de Venise. Coming back to the icy -8C environment of Canada, you will see where and how world-famous ice wines are produced. Finally, you will get the opportunity to view some Napa Valley sweet wines. Join us for an evening of sweet wine tasting and discover endless food pairing combinations.

GERMANY

Only the tenacity of the teutonic backbone of Germany would Rieslings be able to be produced in such divine quality and style. From the esta lage areas, through to the Rheingau and down to Pfalz we will travel the realms of fine German wine making country. Discover Pinot Blanc, Dornfelder and others. Did you know that sparkling wine is the most popular style of wine with Germans? Join us for a wonderful evening and discover many more interesting wine facts.

PORT

The dual city of Oporto and Vila Nova de Gaia are gateways to the famed vineyards of the Douro in Portugal. Understand the hospitality of the Portuguese people and how the origin of Port began. Why are the Port houses mainly English, Symington, Taylor Fladgate or Crofts? Coincidence or design? We will examine 40-year-old tawny ports to the vintage ports made by the regimented stomping process of the lagares. Join us for a moment in history as we cast you back to the shores where Touriga Nacional and Tinta Cao grow superbly.

SPAIN & PORTUGAL

It’s not all Port and Sherry in these premium wine-producing regions. Portugal is home to the famous Vinho Verde and the Southern regions of the country offer delectable wines. We will see the South of Lisbon and understand the importance of the Douro River. To the East we have Spanish Rioja, heavily influenced with American oak and delicately matched with the Tempranillo of Navarra. Within the meseta we move to the South of Spain or to Rias Baixas in the West. With so many wines to choose from and endless combinations of food to pair with, join us as we re-discover the Iberian Peninsula.

SHERRY

Sherry and Spain are synonymous. The Sherry triangle is in Southern Spain, where hot temperatures make for ideal conditions for the vines and grapes. Nestled and treasured in the solera system we appreciate the history, passion and resilience of this fine masterly wine. Found across the far-flung corners of the world, Sherry brings together historical volumes of the age of discovery and the touch of culture.

WHISKEY

Have more than a dram; it’s good for you! The highlands and the lowlands may be your reference when it comes to wine, but don’t forget about Islay. Prefer the single malt or the blends? Know the difference.

We will uncover the mystery of whiskey from North America to India, Japan and even Taiwan. Did you know that Canada gained the award for best whiskey in the world? Learn about the ‘water of life’ from fellow whiskey aficionados!

SAKE

Sashimi, sushi and other fine Japanese cuisine is conquering the world. In many parts of the world we are greeted by the delicious cuisine and now the opportunity to understand the finely made liquor that pairs with this cuisine – Sake!

Discover a part of ancient Japan through Sake. Together we will explore the different styles, of sake through taste, smell, aroma and flavours. Next time you order a Daiginjo or Honjozo you will know the difference.
